One of the Primal Blueprint Reader Created options is a ‘Coconut Cookbook’.
I decided to try the Coconut Granola today… WOW!!! That was great!
I added a little watered down coconut milk and it was JUST LIKE CEREAL!!!

Here is the recipe – but make sure you go to Mark Sisson’s site and get the cookbook for yourself!

INGREDIENTS
2 Tablespoons coconut oil liquefied
1 Tablespoon vanilla extract
¼ tsp almond extract
¼ teaspoon stevia extract, you could also use 12
Table spoons honey if you don’t like the taste of stevia
1 teaspoon honey (if using stevia)
1 cup of coconut flakes (unsweetened)
¼ cup of each (raw) sliced almonds and pecan pieces,
(if you have other types of nuts lying around feel free to
sub them in).
1 tablespoon of ground up flax seeds
1 pinch of cinnamon
1 pinch of nutmeg

Directions
Get ready to make your delicious primal granola, preheat your oven to 300°F.
Whisk all the liquid ingredients together.
Then mix in all the other ingredients in the order listed, making sure to coat coconut and nuts.
Bake for about 7 minutes, stir and then bake for another 7 minutes or until it’s toasty and golden brown, watch
to make sure it doesn’t burn; it can go from beautiful toasty brown to black in just a few minutes.

I never knew….

When I was a little kid, something turned me off of Brussels Sprouts. I have no idea what it was – I honestly couldn’t tell you what they tasted like. I just knew I did not like them, so I never ate them.
A few weeks ago, Deb and I were talking and she was RAVING about a brussels sprout recipe. I couldn’t knock it, I had never tried it. I figured, if she loved it so much, I should give it a shot.

Well – I have burned through about 15 bags of Trader Joe’s Brussels Sprouts since that time. I can easily eat an entire bag in one sitting. No joke.
The secret is in how you make it – because steamed brussels sprouts are not fun… but pan seared or baked is a whole different story – and add some bacon…. oh my.

Here is Deb’s favorite recipe. If you get the chance this week – check it out… don’t get mad at me if you get hooked – I never knew I loved brussels so much!
